Mexican meatball soup can be a quite tasty, but it's also relatively hard to make if you're not used to Mexican cuisine. So if you want to prepare your own then here's what you need to do.
If you are in a hurry, you can save some time by using frozen meatballs. You should be able to find some at your local grocery store, but feel free to buy it any place where it's available. A pack of frozen meatballs can serve 3 to 5 people, depending on its contents.
Frozen meatballs generally don't taste as good as the real thing, but they are a good alternative in situations where you don't have the time to prepare your own.

Before you start cooking your Mexican meatball soup, it's best to separate the ingredients into two categories: Those which you will need to prepare the soup and those which you will use to make the meatballs.
For the meatballs, you will need the following:
With regards to the soup, you will need:
- Ten to eleven cups of water
- A tablespoon of salt
- Two tomatoes
- Four cloves of garlic
- Two to three potatoes
- One large carrot
- Two celery stalks
- A tablespoon of olive oil
- A quarter cup of rice
- A quarter cup of tomato soup
- A quarter teaspoon of crushed coriander seeds
- Four tablespoons of chopped cilantro
- For garnish, you will need lemon wedge and/or cilantro springs.
Before you star to cook the soup, be sure to prepare all the ingredients. The tomatoes, garlic and carrots will have to be cleaned and sliced, while the potatoes will need to be cut into cubes. If you want to slice the celery stalks, you can do that too, but it won't be necessary.
If you want to prepare your own meatballs then simply take all the ingredients listed above, and mix them together in a large mixing bowl. If you have a food processor, use that instead. You should be able to produce 35 to 40 meatballs for the soup using the ingredients above.
As for the soup, the process is a little more complicated, b. Start by boiling water in a large pot. Add the salt and then begin lowering the heat to medium.
Next, start putting the meatballs into the water. Do it one at a time to make things easier. Wait for about ten to fifteen minutes then lower the heat to simmer.
After that, take a skillet, put it over medium heat and then add the oil. While the skillet is nice and hot, add the following ingredients one after another in two minute intervals:
After all the ingredients are ready, add them to the meatball pot and then follow it up with the potatoes, carrots and celery. Let the whole thing simmer over medium heat for about twenty minutes or so then add the tomato sauce, the coriander and cilantro.
Wait for the soup to boil, so that the flavors of all the ingredients really come through. This usually takes eight to ten minutes, but feel free to wait until the soup tastes just right. Serve your Mexican meatball soup with cilantro sprigs and lime wedges.
