How I Like My Queso Con Carne Recipe
I practically grew up eating my mom's version of queso con carne, which was made with a can of Rotel (canned tomatoes with chilies) and Velveeta cheese (a type of processed cheese).
You can actually try using other types of cheese if Velveeta isn't that attractive to you, but for some reasons, you may end up not feeling satisfied with what you have made.
For the chilies, I prefer using fresh ones just because I want to add some freshness in what I eat! But if you feel like fresh chilies may overpower your queso, or if your kids are not fond of fresh chilies, then you might as well go for those like Rotel.
I actually tried using alternative cheeses for my queso, but while the taste wasn't bad, it felt like something was missing. It's the creaminess of Velveeta cheese that's so hard to find in other types of cheese.

Easy-To-Prepare Queso Con Carne Recipe
Prep Time: 15 minutes
Cook Time: 30 minutes
Serves: 8 people
1 teaspoon vegetable oil
3 jalapenos, seeded and chopped
3 serranos, seeded and chopped
1 small yellow onion, chopped, about ½ cup
12 ounces Mexican chorizo
2 pounds Velveeta, cut into 1-inch cubes
½ -3/4 cup whole milk
1 14-ounce can diced tomatoes, drained
¼ cup fresh chopped cilantro
Tortilla chips for serving
1. In a non-stick skillet or a cast-iron skillet, heat oil over medium-high heat. Saute the onion and chilies with the chorizo until it's cooked and the vegetables are soft. Do this for about 5 minutes
2. Reduce the heat a bit and add your Velveeta cubes. Stir gently until Velveeta is melted, smooth and creamy. Gradually add milk if you think the queso is too thick. The amount of milk you will add depends on the consistency you want your queso to have.
3. Add in your canned tomatoes and cilantro. Stir well to combine the ingredients.
4. Serve warm with chips and tortillas!
